a Bacon, Egg and Tomato sandwich!
Our mom (Finch’s and mine) used to make these for us for really ANY meal….breakfast, lunch or dinner. It tops the list of comfort food breakfasts for me! And it’s even more perfect at this time of year because of the gorgeous beefsteak tomatoes coming in from our garden. SO yummy! And seriously all all-over winner; feeds my body AND my soul.
Here’s the recipe, per person (altho it’s so easy to make you don’t really need one):
2 slices bread
2 slices bacon, cooked (turkey or soy bacon also work!)
Beefsteak or other large tomato, sliced
1-2 eggs per person, scrambled
Miracle Whip (yes, I’m from the South)
Assemble sandwich by breaking bacon into smaller pieces and arranging them in a layer over one slice of bread covered with Miracle Whip. Layer the scrambled eggs onto that, then lay the sliced tomatoes over the eggs. Be sure you have enough tomato to cover the entire sandwich (it’s all about the taste combinations!). Then, close the sandwich by placing the second slice of bread/Miracle Whip on top.
Wrap the entire sandwich in waxed paper (so that you can eat it without all the ingredients falling out!).
I usually just eat 1/2 a sandwich per meal (so you can halve the amounts above)…it’s pretty filling. But oh! Delish!
