Roasted root vegetables!

This is amazingly easy to make, has virtually no calories or fat and is perfect for a side dish to serve at your holiday meal!

What you will need:

  • 1 lb. carrots
  • 1 lb. parsnips
  • 10 extra large brussels sprouts
  • 1 medium yellow onion 
  • Olive oil
  • Thyme
  • Rosemary
  • Basil
  • Salt and Pepper  

Preheat oven to 300 degrees.

Wash all vegetables and peel the carrots and parsnips, cut them at an angle into 1-inch slices. place into large mixing bowl. Then trim the base of the brussels sprouts and cut them into 1/4 ‘s and slice the onion into 1/2″ sections.

Place all vegetables into large mixing bowl, coat with 1/4 cup olive oil. Sprinkle 1 tsp each of the Thyme, Rosemary and Basil on top of the coated vegetables, mix thoroughly (I use my hands) and place onto large baking sheet.

Roasted raw

Cook at 300 for 40 minutes, then stir the vegetables to ensure even cooking; cover with foil and cook for another 10 minutes.
