Tired of heavy Holiday fare?
My amazing husband whipped this up the other night; it was so easy to make, very light and delicious!
Angel hair pasta with mushrooms, onions and capers…divine!
What you will need:
- 1 1/2 tbsp Olive oil
- 1 pat of butter
- 1 box Angel hair pasta
- 2 (6oz) boxes of fresh large button mushrooms (sliced uniformly to 1/8″)
- 2 tbsp capers
- 2 tbsp finely chopped onion
- 1 tsp finely minced garlic
- Salt and Pepper to taste
- 2 tbsp fresh grated Parmesan cheese
Bring large skillet to medium heat, add Olive oil; warm.Then add onions and garlic, saute until translucent. Add mushrooms, stir.
Begin to cook pasta to directions on package.
Make a small space in the middle of the mushrooms and add pat of butter.
Continue to turn mushrooms until coated and brown. Add capers to pan and stir. Ladle in small amount of pasta water to sauce to keep moist.
Pasta: Using pasta fork, remove pasta from water and add to saucepan, stir. Salt and Pepper to taste.
Serve in large pasta bowl, add Parmesan cheese.
