New healthy whole wheat vegetarian pasta dish!

Whole wheat fusilli pasta with sun dried tomatoes, onions and baby spinach…amazing and easy!

What you will need:

  • 1 1/2 tbsp Olive oil
  • 1 box Fusilli whole wheat pasta
  • 2lbs Baby Spinach
  • 8 whole sun dried tomatoes packed in olive oil (julienne into 1/4″ chunks)
  • 2 tbsp finely chopped onion
  • 1 tsp finely minced garlic
  • 2 tbsp fresh grated Parmesan cheese

Bring large skillet to medium heat, add Olive oil; warm.Then add onions and garlic, saute until translucent.

Begin to cook pasta (entire box) to an al dente firmness (about 8 minutes) according to  directions.

Add spinach in large bunches, folding into oil, garlic and onion mixture until coated. Continue until all spinach is in skillet and has been sauteed to a dark green color. Add sun dried tomatoes and toss into mixture; turn heat off.

Pasta has been cooked, drained and rinsed with cold water to stop the cooking process and rinse the excess starch off.

Toss pasta with spinach, sun dried tomato and onion mixture. Plate and add Parmesan cheese.
