Whole wheat orzo pasta with cucumbers and feta cheese…delicious hot or cold!
What you will need:
- 1 1/2 tbsp Olive oil
- 2 cups Orzo whole wheat pasta
- 1/2 cup feta cheese
- 1 English cucumber (wash, peel and chop into 1/4″ chunks)
- 1 medium thin skinned lemon
Zest the lemon, slice in half and squeeze all juice into large bowl, then add feta cheese; chop cucumber and place on top. The Feta cheese will absorb much of the lemon juice making it extra zesty.
Begin to cook pasta to an al dente firmness (about 8 minutes) according to directions.
Drain pasta and rinse with cool water to eliminate starch and stop cooking process. Drizzle Olive Oil over pasta and mix to coat. Then add cucumber, feta and lemon and mix gently to coat. Salt & Pepper to taste.
