We just returned from an amazing trip, where everything we ate was fresh, no preservatives….and so healthy!
So we decided to make Gazpacho today..so easy and very few ingredients, or time needed!
- 2 Cucumbers
- 2 Tomatoes (1 yellow, 1 red)
- 1 Clove of garlic
- 1 Red bell pepper
- 1/2 yellow onion
- 1 Can stewed tomatoes (we used one with Oregano, Basil & Garlic)
- 8 Leaves fresh basil
- Salt & Pepper
- Dash of Frank’s red hot
- 1 Lemon
Skin cucumbers then scoop seeds out, cut in half. Slice tomatoes into quarters, slice onion into 1/2 inch pieces. Cut bell pepper into 1/2 inch slices as well. Peel garlic.
Place all ingredients into food processor and pulse until soup is chunky. Then add lemon juice, salt & pepper and Frank’s red hot. Process until soup is pureed (we like it with a slightly chunky texture).
Pour into serving dishes and garnish with a bit of basil.
This took 20 minutes start to finish and it tastes fantastic!
