Lentil Stew with Crisp French Bread
- 6 cloves garlic, minced
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 1 onion, chopped
- 1 bay leaf
- 1 tablespoon olive oil
- 5 cups vegetable broth
- 2¼ cups uncooked brown lentils
- 1 (14.5-oz) can organic fire-roasted diced tomatoes
- 1/2 teaspoon ground coriander
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 tablespoons chopped fresh parsley
- ½ loaf whole-wheat French bread
Sauté first 5 ingredients in hot oil in a large skillet 5 minutes or until just tender. Transfer to a 5- to 7-quart slow cooker. Add broth and next 4 ingredients. Cover and cook on LOW 8 hours or until lentils are tender. Sprinkle each serving with parsley.
Preheat oven to 400°F. Bake bread directly on oven rack 10 minutes or until toasted.
This is the MOST amazing vegetarian soup recipe! It is so hearty and so flavorful. If you cook with lentils often, you know that they don’t have much flavor on their own. But the garlic and the fire-roasted tomatoes really up the flavor ante in this awesome soup. It’s fabulous for winter….and also wonderful for cold and flu seasons!
