Since it’s so cold outside, I thought it was time for some healthy comfort food and judging how quickly it disappeared, it was a great idea!
- 1 tablespoon olive oil
- 6 medium yellow summer squash, thinly sliced (about 1/8″)
- 1 large Yellow onion, thinly sliced
- 1 cup shredded sharp Cheddar.
- 1/2 cup Panko crumbs
- Salt and freshly ground black pepper
Preheat oven to 350 degrees.
Saute onion in Olive Oil,while slicing squash. Then add squash in Salt & Pepper and cook until translucent. Use small casserole dish. Layer cooked squash and onion mixture into the bottom of the dish, then add layer of cheddar cheese. Repeat until out of squash and onion miixture. Add layer of cheddar cheese on top and cover with thin layer of panko for crunch.
Bake for 20 minutes or until top is golden brown.
Serve and enjoy…add sour cream or hot sauce if desired!
